How to make grades?

I bough Railmodeller a long time ago (I do not know what version-2011). It has been very useful. I am trying to catch the essence of provinces in a layout in my country and elsewhere. Itis useful because it is so fast.

But I never learned how too make grades. I see the symbols for it but I cannot make I work. Is there some trick to it or do I have the wrong version?
