RailModeller Pro and RailModeller Express are (and always have been) 64-bit versions - so you're all set!
You might be referring to our old app, RailModeller Classic (in development until 2014)?

Hello Michal,
We don't currently support slot car borders as these would need to 'snap' sideways to tracks.
As this is a specialty of slot car tracks (who represent a very small percentage of our user base) snapping is for now only possible between two tracks.

You can use the standard macOS Font Panel (Command T) to change font properties of the current selection!
The font size for element names (product numbers) can be controlled in the sidebar to the right under the Document tab.

You can add text shapes using the shapes popup!
Also user-defined elements like rectangles or shapes can have a custom name assigned in the sidebar to the right.

einfach die gewünschten Gleise auswählen und Höhen Anpassen > Gleise anheben oder absenken im Menü Element aufrufen.
